Energy Bites

Gluten free, vegan (if dairy free chocolate chips are used) 

Ingredients 

1 cup of GF rolled oats
3/4 cup of no stir organic peanut butter
1/2 cup shredded coconut unsweetened
1/2 cup dairy free mini chocolate chips
1 tablespoon chia seeds
1 tablespoon flax seeds
2 tablespoons honey
1 tablespoon melted coconut oil (optional)

Mix all ingredients together. Once combined, check for consistency - if too dry, add more honey and/or peanut butter, if too moist, add more oats until mixture stays together, but isn’t too moist. 

Can be rolled into balls and refrigerated or pressed into a 9x9 baking pan lined with parchment paper to make square bites. Refrigerate for a few hours in pan before cutting into squares. 

Makes about 45 bites.
